Ingredients: 1 kg/2 lb 4 oz boneless chicken thighs, trimmed and halved; a pinch of each, to serve: dried mango powder/amchur, black rock salt powder, ground fenugreek, ground cinnamon, ground cloves, ground mace; 4 tbsp double/heavy cream; 4 green chillies, chopped; 100 g/3½ oz butter, melted; 2 tbsp gram flour/besan; ½ tsp saffron strands mixed with 4 tbsp double/heavy cream; 8 garlic cloves, chopped; 1 tbsp salted butter; 1 tsp black cumin seeds; 1 tbsp ground coriander; 2 tbsp Garlic-Ginger Paste; 4 tsp white pepper; ¾ tsp ground white pepper; 30 g/1 oz soft cream cheese; 2 tbsp mustard oil; 200 g/7 oz/generous ¾ cup plain yogurt; 1 tbsp salt, or to taste; 4 tbsp malt vinegar; 4 tsp Ginger-Garlic Paste

This recipe, which come from the royal kitchens of Lucknow (and was named for a former nizam), produces succulent, lightly spiced morsels of chicken coated in an indulgent saffron cream sauce. It takes only 10 minutes to cook, but plan ahead as it takes 2½ hours to marinate. It is well worth the time. Serve with Mint and Coriander Chutney.
