This hearty curry is a traditional dish from Bihar, where chicken pieces are marinated in a mixture of yogurt and spices, and are then slow-cooked to perfection with onions, ginger and green chillies. Chicken on the bone is the meat of choice, but if you prefer boneless chicken, you can use that too.

Ingredients

  • 500 g/1 lb 2 oz chicken legs or thighs (on-the-bone or boneless, as you prefer)

Method

Place the chicken pieces in a large bowl, add the yogurt, ground turmeric, garam masala and salt, and toss so that the chicken is well coated. Leave to marinate for 10–15 minutes.
