This is a traditional Bengali-style dish of delicately spiced aubergine/eggplant fritters, fried to a crisp and usually served with a simple, homely meal. The recipe requires little time and effort, and makes an ideal appetizer to serve with drinks, or can be served as a starter or side dish.

Ingredients

  • 1 tsp Kashmiri chilli powder
  • 1 tsp ground turmeric
  • 1 tsp

Method

In a bowl, combine the chilli powder, turmeric, dried mango powder, garam masala, ginger-garlic paste, salt and lemon juice. Mix well.

Lay the aubergine slices out on a plate and sprinkle the prepared spice paste over them. Rub the paste into the aubergine slices with your fingers so they are all evenly coated.

Heat the mustard oil in a large frying pan over a medium-high heat u
