This is one of my all-time favourite Indian desserts. A dish of steamed yogurt with a texture similar to cheesecake, it is very easy to make. I like to flavour it with rose and serve with seasonal fresh berries and a sweet-sour berry chutney.
First, make the berry chutney. Combine all the ingredients in a saucepan and stir over a medium heat until the berries completely collapse. Remove the star anise and transfer to a food processor. Blitz to a smooth paste. Transfer back to the pan and simmer, uncovered, for 10 minutes. Cool, transfer to a sterilized jar and store in the refrigerator until needed.
