Hyderabadi biryani is a style of biryani originating in the kitchens of the former nizams (rulers) of Hyderabad State and is a key dish in the region’s cuisine. It is traditionally made with basmati rice and meat (mostly mutton), but there are a lot of variations to be found with seasonal greens and mushrooms. Hyderabad is particularly famous for its biryani and kababs. I have tried many biryanis over the years, but my personal favourite is definitely Hyderabadi, which is norm
