A delicacy of Andhra cuisine, this knockout recipe is a spicy and delicious fry that can be served with rice or chapati. It is very simple and easy to prepare with basic ingredients that are likely readily available in your kitchen.

Ingredients

  • 500 g/1 lb 2 oz lamb or mutton, diced into bite-size chunks

Method

Place the lamb or mutton pieces in a bowl, add the salt and turmeric and toss well to coat. Set aside.

Dry-roast the spices for the spice mix in a kadai or heavy saucepan until aromatic. Leave to cool, then grind them to a fine powder in a spice grinder.
