Egg curries are very popular across India and every single region has their own way of preparing them. In North India, this mild dish is referred to as korma and is made with a base of yogurt and cashew nuts. In South India, it is kurma and is made with coconut as the base. Being Punjabi, I was naturally serving a Punjabi egg curry recipe at my restaurant Manthan in Mayfair, but I recently changed to this South Indian version as I find it very well balanced.
