Bebinca is a popular multilayered Goan cake, with a rich golden-brown colour and enticing flavours of coconut, vanilla and date syrup. An Indo-Portugese delicacy, it is a must at nearly all Goan religious and secular festivals, including Christmas and Easter. This version is slightly less sweet than is traditional, as I prefer it that way.
