Poha is a simple, light and quick breakfast or all-day snack dish made with flattened rice, peanuts and spices. Variations are found around India, sometimes adding seasonal greens, roasted peanuts, lime juice or aloo bhujia (spicy crisp-fried potato noodles – I really like to add some of these to boost the recipe when I have them – they can be bought in any Indian grocery store or supermarket). My mother always added a little bit of sugar too – she loved this served with a cup
