These crispy batter-fried prawns/shrimp are one of the signature dishes in my restaurants and very popular. This recipe is made by those who live in the small villages, or ghats, around Maharashtra. Ghati masala is a hot spice mix used in many of their snacks and curries. I have slightly tweaked the recipe to tone down the heat a little to work well with prawns. This is so easy to make – I know you’ll love it.
