This is a typical savoury snack food from Gujarat. Melt in the mouth and very moreish, these gram flour rolls are a delicious, healthy option for whenever hunger strikes. Spicy, sour and gently sweetened by the fresh coconut filling, they go well with a cup of chai.

Ingredients

  • 1 cm/½ in piece of fresh root ginger, peeled and chopped
  • 1 green chilli, deseeded and chopped</

Method

Grind the ginger and green chilli together in a pestle and mortar until you have a paste. Set aside.

Put the yogurt in a bowl, then add the water and stir until smoothly combined. Stir in the ginger-chilli paste, turmeric, asafoetida and salt. Now add the gram flour, whisking until all the lumps have dissolved and you have a smooth batter.
