Kadhi is a very popular dish across India and an essential part of Gujarati cuisine. Traditionally made from buttermilk or yogurt and gram flour/besan, it often features pakoras, but this easy version omits them. It makes for a quick, comforting lunch or dinner paired with a side of steamed basmati rice or chapati.
In a large saucepan, combine the yogurt with the gram flour, ginger paste, green chillies, turmeric, sugar and salt. Whisk well so there are no lumps. You can use a hand blender for this too. Add the measured water and mix thoroughly until you have a lump-free, thin batter.
