This lamb, lentil and potato curry is Gujarati comfort food. The lentils dissolve into the sauce giving it a thick, mellow texture and the tender mutton melts in the mouth – a perfect combination.

Method

Wash the lentils under cold running water, then leave to soak in plenty of fresh water for 10–15 minutes.

Heat the oil in a large pan (that has a lid) over a medium-low heat. When hot, add the onions and sauté until golden brown. Add the mutton pieces, tomatoes, chilli powder, turmeric, ground coriander, salt, garlic, ginger and diced potatoes, and stir to combine. Drain the lentils and
