Red mutton is a very popular recipe from Rajasthan. It is a fiery meat curry, made with a combination of Kashmiri red chillies and other popular Rajasthani spices in an onion and yogurt sauce. It is typically very hot and rich in garlic. Laal maas goes very well with chapatis. I have given an extra option of infusing the curry with aromatic smoke at the end – for this you will need a small piece of charcoal and a heatproof bowl. It adds fantastic flavour, but is entirely optional.
