Ghati masala is one of my favourite spice mixes – it goes very well with my signature dish of crispy fried prawns (see Ghati Masala Prawns) and is essential for dishes like Vada Pav. This is a Maharashtrian mix (named for the ghats – mountain passes – of the region). It is worth making your own fresh spice mix rather than buying it from the market, as the flavour will be so much better.
