This is another very famous Maharashtrian spice mix, which goes by two names: kala or goda masala. Goda means “sweet” and kala means “black” in Marathi. The two mixes are very similar, but the sweet element in goda comes from the use of coconut, which I omit here. The flavourful kala masala spice mix is indeed a very dark brown, almost black, colour, as the whole spices are roasted until they are very dark before grinding.
