This tangy powdered spice mix is a combination of dried mango, cumin, coriander, dried ginger, dried mint, asafoetida, black salt, table salt and black peppercorns. It is typically used as a seasoning for salads and kebabs.
Put the cumin seeds, peppercorns, black salt, dried pomegranate seeds, dried mint, carom seeds and fenugreek seeds in a spice grinder and grind to a fine powder. Transfer to a bowl, add the remaining ingredients and mix well. Sift to remove any large pieces.
Store in an airtight container for up to 6–8 weeks.
