Coconut chutney is a popular dip in southern India that is served with most snacks and dosa. This is a very simple way to make it at home.
Heat the oil in a saucepan over a medium heat. Add the curry leaves, green chillies, chana dal, ginger and grated coconut, and sauté for 8–10 minutes. Remove from the heat and transfer to a bowl to cool.
Transfer the cooled mixture to a blender and blitz to a fine paste, adding a little water if required. Transfer to a bowl.
