Chocolate wafer Cookies

Quite a few recipes in this book use chocolate wafer cookies in a cookie-crumb base, and until recently (and throughout the recipe testing of this book) these cookies could be purchased at the grocery store. They have been discontinued, so I have included a recipe for my own version of Chocolate Wafer Cookies. Oreo Thins are also a good replacement, but their cream filling will change the taste and texture of the final crust, and you may need to add more cookie crumbs to balance the cookie-to-butter ratio.
