Until recently, it was nonsense to discuss Italian artichoke recipes in Britain because one simply couldn’t find the correct baby artichokes, and if you could, they were so old that they had developed a spiky choke. Now the real article can be found, so the following recipes may be attempted. The first one – Carciofi alla Romana – is in a way the master recipe because it is a reasonably foolproof method and details how to prepare the little blighters.
