White vino da tavola into which Tuscans dip their cantucci di Prato. It is usually made from a Malvasia/Trebbiano blend of dried or semi-dried grapes (passito). Vin Santo means ‘holy wine’, possibly because it is usually made around Easter, but the name may be derived from that of the Greek island of Xantos, where the vine originally came from.
