Nutritional yeast is made from deactivated yeast that was grown specifically for nutritional purposes. It is high in calcium, other minerals, and many vitamins, including B vitamins and particularly B12, which is often lacking in vegan diets. Nutritional yeast lends a cheeselike flavor and depth to dishes. It is available in both flake and powdered forms, often in the bulk section of natural food stores.
