Nutritional yeast is made from deactivated yeast that was grown specifically for nutritional purposes. It is high in calcium, other minerals, and many vitamins, including B vitamins and particularly B12, which is often lacking in vegan diets. Nutritional yeast lends a cheeselike flavor and depth to dishes. It is available in both flake and powdered forms, often in the bulk section of natural food stores. The recipes in this book use nutritional yeast flakes, not the powder.
