Bamboo shoots are harvested from bamboo; as soon as they are cut, they develop a bitter flavor and must be treated immediately to preserve their fresh sweetness. For this reason, canned bamboo shoots are not much inferior to fresh bamboo shoots because they have all been processed to maintain their flavor and crunch. Canned bamboo shoots are available in most major supermarkets and in Asian markets.
