Galangal is a relative of ginger and looks similar, but has distinctive thin yellow stripes and pink shoots. It has a stronger, more fiery bite than ginger and is the root of choice in Thailand and other Southeast Asian countries. You can find fresh galangal in many Asian markets, but you can always substitute fresh ginger.
