Green papayas are unripe, with green skin, firm white flesh, and small white seeds. They range from oblong to round in shape and are about the size of summer melons. The fruit should be rock hard and uniformly green. Green papayas can be found in most Asian markets and in some natural food stores. You can substitute European cucumbers, jicama, or Granny Smith apples for a similar texture.
