Lotus root is a long, cylindrical root that has pores inside running along the length of the root. The skin is thin and pale brown and the tan-colored flesh is fibrous and crisp when cooked. It has a wonderful earthy flavor and looks beautiful when sliced crosswise. You can find fresh lotus roots in some major supermarkets and in Asian markets. Look for roots that are not bruised and still have the tough root ends, which keep them fresh.
