Rice paper, known as banh trang in Vietnamese, are paper-thin sheets made from rice flour, water, and salt. They come in circles, squares, or triangles and in various dimensions. Sold dried, the rice paper sheets are brittle and crack easily and must be softened in hot water before they can be used as a wrapper.
