III. Nut Cake

For nut cakes, encrust the outside of the cake with chopped toasted nuts—the same as the ones in the cake batter.

1. Ganache with dark rum added.
2. Rum, brandy, or coffee buttercream.
3. Rum-flavored whipped cream.
