Nuts are used in many of our recipes. It is important to buy nuts that have been handled properly and taste fresh. Since they have lots of oil in them, nuts can go rancid relatively quickly. For the best chance of finding good nuts, go to a market that does a brisk business. The best way to store nuts for any length of time is in an airtight container in your freezer. Remember that nuts are a seasonal item. They are harvested annually, and one year’s crop can taste slightly different from another year’s. Depending on the yield of the crop, the prices may also change dramatically.
