The temperatures for these recipes are intended for conventional home ovens. If you have a convection oven, it will work perfectly well for pastries and cakes—just decrease the baking temperature by 25°F [14°C]. Bake the items for the same amount of time stated in the recipe. For bread recipes, we highly discourage the use of convection ovens. The blowing air often dries the surface of the bread before it is able to reach its maximum volume.
