Proofing Baskets and Linen Couches

Our French Baguettes, Chestnut Baguettes, and True North Bread all call for linen couches. They are available in our shop or online (search for “couches for bread baking”). They are made of heavy flax linen, and either an 18-by-36-in [46-by-91-cm] or 26-by-36-in [66-by-91-cm] piece would work well for home baking.
The Farm Bread is formed into loaves and then placed in proofing baskets for its final period of fermentation. The baskets hold the shape of the loaves during their relatively long fermentation time. They also leave decorative flour markings on the exterior of the loaves. We use traditional baskets made from willow. Some bakeries now use plastic ones because they clean more easily and cause less anxiety with health inspectors.
