Preheat your oven and baking stone for at least 45 minutes prior to baking. Place your baking stone on a middle or lower rack at least 2 in [5 cm] from the front of the oven. If steam is required for your recipe, place a cast iron skillet on the bottom of the oven such that it is ½ in [1.5 cm] from the oven door. Have a large stainless steel bowl or aluminum roasting pan that is taller and larger than your loaves ready.
