Whole kernels are called Rye Berries. Berries can be ground to a Rye Meal, its texture can be coarse or medium. In some markets these products are labeled as Pumpernickel Meal. When rye berries are finely ground, the result is called Rye Flour. And since we’re still talking about the entire kernel in this case, it’s often identified as Whole Rye Flour.
All these meals and flours are versions of the whole grain, breads made from these are flavorful and nutritious. The various degrees of coarseness determine the uniformity of the crumb structure. Whole Rye Flour for more uniformity, Coarse Rye Meal for less.
