4 – Baker’s Percent (BP%)

The Baker’s Percents are based on the ingredient weights in grams. Using grams helps you see the relationship among the ingredients and reinforces your ability to think in terms of Baker’s Percent. Recall that a baker divides the weight of a single ingredient by the total weight of the Flour in the formula to find its Baker’s Percent.
