Q: How many loaves of bread will I get from each formula?
A: In a professional bakeshop, the formula yield is rarely given in number of loaves. It’s listed as a total weight.
The baker decides what size breads to make, not the formula. Boules, loaves, or slider rolls. Use this table when calculating the number of pieces and the size of your breads.
Q: How do I read the table?
A: For each bread, the Basic Yield appears in the shaded column of the formula table.
A 1,000 gram batch is easy to make completely by hand, directly on the bench. It also fits a tabletop mixer with a bowl capacity of 4-½ to 6 quarts.
