In the Basic Formula, the weights given in ounces are approximated from the gram weights for each ingredient.
The ounce weights have been rounded up or down, so things are easy to scale. One and a half ounces is quicker to weigh than one and two-fifths. It’s also less likely that a scaling error will subvert your efforts when the weights are rounded.
When you total up all the ounce weights in a formula, it doesn’t always equal the corresponding total of grams. Don’t worry. The formulas have been tested using both systems.
