When done with the couche, gently shake it over a compost bin. The couche must be completely dried before it is stored. In a production bakery, there are sometimes a series of wooden dowels or towel rods affixed to one wall in the bakeshop for this purpose. For infrequent use, drape the couche over a rolling rack while it air dries.
The dried couche can be folded or rolled. In this shape, 6 to 8 couches are easily stored on a full sheet tray in the equipment box. In a classroom bakeshop, this system works well:
