Cook the porridge separately. You can cook it once your main dough starts the Fermentation Phase or prepare it ahead and keep it refrigerated.
Soak the grains overnight to soften them and shorten the cooking time. Soaking activates enzymes which digest the starches and produce sugar molecules and flavor compounds. Soaked grains are easier to digest and have more flavor.
