When it’s time to feed your Wild Yeast Culture... Zero your scale. Weigh the Culture and its container together. Subtract the tare weight of the container to determine the Initial Weight of the Culture.
Multiply the Initial Weight of the Culture by 1.25 to determine how much Water you need. Add the Water and stir.
Scale Fresh Flour to equal the Initial Weight of the Culture. Add the Flour.
Blend well.
Dip your fingers in water to wipe down the wall of the container.
