A Note on Perfect Biscuits

When rolling out, cut the shapes as close together as possible so you are not re-rolling too often (or the dough will toughen). When ready, biscuits will look darker but may seem underdone. They aren’t. They will crisp up. Always space biscuits out on the baking sheet at least 1cm apart, as they spread.
