Winter melons are a group of melons characterized by their late harvest. Casaba melons have a light yellow to yellow-green skin that becomes smooth and velvety as the melons ripen. Casabas have a rich melon aroma when ripe. Crenshaw melons have very fragrant, salmon-colored flesh and, when ripe, a slight softening near the stem. Honeydew melons are juicy with vivid green flesh; their skin loses any greenish cast and develops a velvety and slightly tacky feel when they are ripe. Persian melons have dark green skin with yellow markings and yellow orange flesh. When ripe, they feel heavy for their size and yield slightly when pressed.
