Cake rings are stainless-steel rings available in diameters ranging from 2¾ to 12 in/7 to 30 cm and heights from 11/3 to 3 in/3.4 to 8 cm. They are used for molding cakes and individual pastries.

Flan rings are straight-sided stainless-steel rings with rounded edges. They are used for baking and molding tarts and European-style flans. They are available in diameters ranging from 21/2 to 11 in/6 to 28 cm and are ¾ in/2 cm high.

A madeleine mold is a tinned steel or aluminum sheet with scalloped impressions used for molding the small cakes called madeleines. They are available with or without a nonstick coating and have from twelve to forty cavities per mold. The impressions are available in two sizes: large and small.
