Flexible silicone baking mats are able to with stand oven temperatures up to 500°F/260°C. They are used for lining sheet pans to give them a non-stick baking surface. They also provide a nonstick heat-resistant surface in candy making. The mats are about ⅛ in/0.3 cm thick and come in full sheet pan and half sheet pan sizes. They should be stored flat to prevent them from splitting.

Parchment paper is grease-resistant, nonstick, heatproof, quick-release coated paper. It has endless uses in the bakeshop and pastry shop, such as lining baking pans and making piping cones for décor work. The paper can be reused until it becomes dark and brittle. It comes in large (full-sheet-pan size) sheets, in rolls, or precut for special uses such as making piping cones or lining cake pans.
