Cooling Quick Breads and Cakes

After removal from the oven, quick breads and cakes should be allowed to cool slightly in the pan before unmolding. To remove a cake or quick bread from the pan, you may need to run a small knife or metal spatula between the cake and the pan. Press the tool to the pan so as to not cut or damage the item in any way. Invert the pan onto a wire rack, tap lightly, and lift the pan gently to release. Peel the parchment paper from the bottom of the cake to allow steam to escape. Items must cool completely before they are filled, iced, glazed, or otherwise decorated.
