Making a Caramel Cage

Small cakes and other desserts look dramatic when covered with a little caramel dome.
  1. Rub the outside of a metal bowl with vegetable oil. Prepare the caramel.

  2. Immediately after dipping the bottom of the caramel pan in water, pour the caramel in thin streams over the bowl and allow to cool for 5 minutes.

  3. Gently nudge the dome off the bowl.

  4. If the dome is smaller than the cake, place it on top; if it is large enough, place it over the cake or over individual servings.
