Assembling a Layer Cake with Two Fillings

Whipped Cream-Covered Chocolate Chestnut Cake

  • About
  1. Slice each layer cake into 2 layers and place the first cake layer on a ring of cardboard.

  2. Pipe a ring of stabilized whipped cream along the edges of the cake layer.

  3. Spread 1 cup of the chestnut filling in the center and up to the ring around the cake layer.

  4. Place the second and third cake layers, piping rings of whipped cream and spreading with chestnut filling.

  5. Put on the last cake layer—ideally, the bottom of one of the cakes—and spread with whipped cream.

  6. Spread the tops and sides with a thin layer of whipped cream.

  7. With a ¾-inch plain pastry tip, pipe strips of whipped cream over the top of the cake.

  8. Smooth off the ends of the whipped cream strips with a spatula.

  9. Decorate the sides with chopped chocolate…

  10. … or surround the cake with chocolate meringue logs.
