Keeping the Edges of Tarts and Pies from Burning

  1. Fold a square of aluminum foil, about 2 inches longer and wider than the tart, in half.

  2. Fold in half again so you now have a square one-fourth the size of the first square.

  3. Fold on a diagonal as though making a paper airplane.

  4. Fold again so you have a narrow long triangle.

  5. With the sharp point of the triangle at the center of the tart shell, cut the triangle about 1 inch from the edge of the tart, cutting off the point of the triangle.

  6. 6. Unfold the wider end of the triangle into a circular strip, and use it to cover the edge of the tart or pie shell when you put it back in the oven to finish baking.
