Mixing the Dough Ingredients

  1. To mix by hand in a bowl, combine all the ingredients with a wooden spoon. When the mixture gets too stiff to stir, scrape the wooden spoon with a bench scraper.

  2. Finish working the dough together with your fingers.

  3. Let the dough rest before turning out onto a work surface.

  4. To mix by hand on a work surface, put the flour in a pile on a work surface and make a well in the center with your fingers. Pour warm water into the well and sprinkle the yeast over it or add the starter. Let sit for 3 minutes, then combine the mixture by pulling the flour into the water with your fingers.

  5. When the dough becomes stiff enough, knead it with your fingers.

  6. To mix in a stand mixer, put the flour in the bowl of a stand mixer and pour the water (barely warmed) over it. Sprinkle in the yeast over the water and let sit for 3 minutes, or add the starter.

  7. Turn the mixer on low for 3 minutes to moisten all the flour.

  8. Cover the bowl with a moist towel or plastic wrap and let the dough rest for 20 minutes.

  9. To mix in a food processor, put the flour in the work bowl of the food processor and pour the warm water over it. Sprinkle the yeast over the water, let sit for 30 minutes to moisten the yeast, and process for 10 seconds. If you are using a starter, add it to the mixture and process for 10 seconds. Cover the work bowl with plastic wrap and let the dough rest for 20 minutes.
