  1. Pull the dough up with both hands…

  3. The dough should also be smooth and shiny. Notice how here it still has a rough uneven texture.

  4. Here the dough no longer adheres to the work surface.

  5. The dough is ready when it’s smooth and shiny and you can pull it up into a translucent sheet or “window.” Kneading wet dough until it pulls away from both hands and the table takes about 25 minutes.
