Pull the dough up with both hands…
… and slap it down on the table.
The dough should also be smooth and shiny. Notice how here it still has a rough uneven texture.
Here the dough no longer adheres to the work surface.
The dough is ready when it’s smooth and shiny and you can pull it up into a translucent sheet or “window.” Kneading wet dough until it pulls away from both hands and the table takes about 25 minutes.
