Dividing and Rounding Dough

  • About
  1. Don’t pull dough apart; cut it using a bench scraper, a knife, or scissors.

  2. Notice the gluten structure of the divided bread.

  3. To round the dough, fold it from the outside into the center all around.

  4. Pull the dough together at the bottom.

  5. Press in the sides to make the top of the dough more firm.
